Hy!

I have a question about Corllete Gallery. Is it possible to add sub category's? I would really need this function on my site...

SecretR is it possible to add this if it doesn't exist?

I don't think I wish to add this feature. The idea behind the categories is simple - Main Category === Picture Gallery, Sub-category === Picture Album.
I don't see a reason to add multi-subcategories feature - it'll make things much more complicated.

i would need this becouse i will have categories wallpapers, avatars, then in subcategories i would have wallpapers/cars/ and then album wallpapers/cars/bmw for example. Do you know what i mean? Is there a lot of work to do this? Thank you for the answer.

As I said before - not possible at this time and I don't believe I'll add this to a future release as well. There are other e107 Gallery plugins + Gallery2 bridge. You should give them a try.
